At Hotel Luna, we believe the perfect food truck food should be affordable, easy to eat, and delicious. We noticed a lack of Italian options and hope to fill that void.

Brown Dogs Farm creator, Robb Prohaska teamed up with chefs Ben Acri and Bradley Hill to bring 15 years of combined food service experience to the public.

We make everything from scratch. We start with a family crepe recipe, then a homemade filling, and of course a homemade sauce to finish. It's a labor of love and we love to see you happy. 

The Name

There is popular belief that the dish cannelloni was created in the Amalfi Coast of Italy by Chef Salvatore Coletta in 1924. He took his creation to be tasted by the chefs at Hotel Luna. After tasting, the hotel owner stood up with his napkin still tied around his neck and gave orders to ring the bells of the convent church in celebration. All the bells of Amalfi began to ring in response, and a pasta star was born!

In the United States we call it manicotti. However, in Italy, if it is called manicotti, it’s made with crêpes instead of noodles and that is exactly how we make ours. The result is a melt in your mouth dish that we think is perfect for eating at an event or party. From Brown Dogs Farm creator Robb Prohaska, and Chefs Ben Acri & Bradley Hill, we welcome you to Hotel Luna Food Truck.
